These were amazingly delicious. That perfect avocado makes it! I didn't show it but i washed 2 cups of short grain white rice, and cooked in the rice cooker with 1 t salt, and 1 T sugar, 2 1/4 cups of water. Usually to make sushi rice you season the cooked rice with rice vinegar, salt and sugar. I made this without vinegar because I'm getting ready to launch a 28 day anti reflux plant based challenge that removes all common trigger ingredients for GERD.
